Poached Egg Hash

poached egg hashSome days I wake up and really crave something different for breakfast and that’s where this poached egg hash recipe came from! I was craving breakfasty eggs and bacon but also really wanting sweet potato carb yumminess! Poached egg hash is a great meal to start the day with because it has your proteins, fats and carbs all rolled in to one dish. It’s not a quick dish as it takes about 20 minutes for the spuds to cook, but oh boy is it worth it!

So here’s how to make your delicious treat breakfast of poached egg hash with bacon and coriander! Cube your spuds and fry with the bacon in coconut oil for 20 mins. Meanwhile poach your eggy, scatter with coriander when your done and BOOM! you’ve got yourself a treat! Poached Egg Hash for every meal please!!!

Avocado Pancake

avocado pancakeIf you’ve not tried an avocado pancake you have no idea what you’re missing out on! This avocado pancake recipe is quick, easy, healthy, clean eating, paleo, raw and delicious, if you ask me that ticks all of my boxes! If you need more reasons to eat avocado check out this post on all the health benefits.

So to make this avocado pancake breakfast all you need is half an avocado and 1 large egg. Ok so let’s do this! Scoop out half of an avocado and whisk or mash it up in a bowl until it is smooth. Then crack a large egg in to the avocado and mix in until it’s well combined. Heat a small frying pan and pop a small amount of olive oil or coconut oil into the pan, once it’s hot pour in your avocado mixture and roll in the pan to let it spread. As with normal pancakes use a spatula to test the edges and smooth out the mixture and wait for the avocado pancake to start bubbling holes in the top, then flip it and cook on the other side for another 30 seconds to 1 minute until your happy it’s cooked through.

Once your avocado pancake is cooked, pop it on a plate, spoon on some greek yoghurt and sprinkle on some cinnamon and a dash of maple syrup and oh boy you’ve got yourself THE most delicious avocado pancake breakfast you will ever taste!

You can try this with other ingredients too: use 1 banana a 2 eggs, or 1 small sweet potato and 2 eggs. Whichever tingles your tastebuds and it’s so healthy!!!

Salsa Recipe

Salsa recipeSo after a camping trip with some of my paleo buddies a friend of mine made the MOST delicious salsa and I’ve taken her recipe and tweaked it a bit to make my own salsa recipe! This salsa recipe is amazing because it goes really well with fajitas or with salad on it’s own, or with hummus and pitta bread. Honestly the possibilities are endless! So without further ado here are the recipes and method for my homemade salsa recipe (warning; it’s garlicy!)

Ingredients:

  • 1 red pepper finely diced
  • 2 tomatoes deseeded and finely diced
  • 4 cloves of garlic finely diced
  • 2 spring onions finely diced
  • 1 tbsp apple cider vinegar
  • 1 tsp olive oil
  • A handful of fresh chopped coriander

Method:

  1. Chop all of the ingredients and mix together (yep it’s that simple!)

Pop in an airtight container and pop your delicious salsa in the fridge ready for consumption! If you want to add more colour and make your own salsa recipe why not add some green peppers into the mix as well? It’s also really nice if you squeeze some lime over the top to give a zesty flavour and make your salsa recipe fit your own tastebuds!

Halloumi cheese with honey, pistachios rosemary and thyme

This halloumi cheese recipe is the best! It is perfect as a small meal on it’s own when you’re not really hungry on a hot summers day, and also makes a great side dish for steak or salad. I do love a versatile recipe!

This little beauty couldn’t be any easier! All you need is to grill your halloumi until it’s browned on both sides, then chop up some pistachios and scatter them over the top, drizzle some honey over everything. And then finally chop up a little bit of fresh rosemary and thyme and sprinkle that over the lot. And hey presto you’ve got yourself one flavoursome treat!

Pancake recipe

Every now and again I absolutely crave pancakes and won’t be happy until I’ve had some, so here is a yummy pancake recipe to satisfy those cravings! I made mine a with 50 / 50 gluten free flour and coconut flour.

This pancake recipe is really quick and easy to make and even easier to eat! Check it out!

pancake recipe honey and pecanIngredients:

  • 1/2 cup gluten free flour
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 large egg
  • 1 cup buttermilk or soured cream
  • 3 tbsp honey / agave nectar / maple syrup
  • Handful of chopped pecans

Method:

  1. In a bowl mix together all of the dry ingredients (excluding the pecans)
  2. Gradually add in the wet ingredients until the mixture is smooth
  3. Heat a small frying pan and heat a little bit of coconut oil
  4. Pour in a small amount of the mixture and wait for it to bubble on the top, then flip it and cook for a few more seconds to brown it off. Repeat!
  5. Finally you can stick a little bit of butter (if you’re having a treat!) and some honey, maple syrup or agave nectar on the top and then sprinkle the pecans over the top.
  6. Other topping suggestions are; desicated coconut or coconut flakes, ground cinnamon or nutmeg, a pinch of coconut sugar, or go savoury and add a slice of bacon.

Oatty Yoghurt Breakfast Pots

Oat breakfast pots meal prepI’ve recently started building nutrition plans for people and one of the most common things I hear from my clients is that they find breakfast is the hardest meal of the day and I definitely agree. The morning’s are always a rush no matter what your job and routine is. So the key to eating a healthy breakfast is prep prep and more prep! That is the only way to stop myself from having a breakfast that is bad for me. Quite often there are recipes that need an oven or a hob to cook on and quite a lot of people eat their breakfast when they get to work and not surprisingly your work doesn’t offer a fully operational kitchen complete with a cooker! I was watching a few colleagues who would pop to a nearby Soho Coffee and would buy a tiny yoghurt pot for a couple of pounds and whilst it looked amazing all I could think was I don’t know what’s in it and how expensive it was, and that led me to decide that I could make it for less money and I could make it 10 times more delicious!!! So I’ve bought myself 5 small kilner jars so I can make my own breakfast pots!

Ingredients:

  1. Oats
  2. Greek Yoghurt
  3. Honey
  4. Cinnamon
  5. Cacao nibs
  6. Linwoods flaxseed, pumpkin seed, goji berries

Method:

  • Pour a layer of oats in to the base of the kilner jar
  • Spoon on a layer of greek yoghurt
  • Sprinkle some ground cinnamon on top of the yoghurt
  • Drizzle a small amount of honey on top of the cinnamon
  • Repeat all of the above.
  • Add a pinch of cacao nibs
  • And finish with 1/4 tsp of flaxseed mix on top

Sweet Potato Gnocchi

Sweet Potato Gnocchi

When I started to eat healthy I became just a teensy bit obsessed with sweet potato, to the point where I think I have actually given Roo Boy an aversion to it! So now I feel like I have a child where I have to disguise the sweet potato as something else just to sneak it in to a meal and I am proud to say that if I hadn’t told him (afterwards!) that there was sweet potato in this gnocchi he would have been none the wiser! Mwah ha ha ha haaaaaa!!!

I’ve called this recipe paleo-ish because of the gluten free flour, if you want to make it totally paleo swap out the gluten free flour for almond flour or coconut flour.

Ingredients:

• 100g gluten free flour
• 450g sweet potato, peeled & boiled
• 60ml almond milk
• 2 tbsp olive oil
• 1/2 tsp garlic powder
• 1 tsp agave nectar
• Carton of pasata
• 2 tsp paprika
• 2 chicken breasts
• 1/4 chorizo ring

Method:

  1. Put boiled sweet potatoes in a boil and mash.
  2. Pour in the olive oil and milk and mix together.
  3. Gradually add the garlic powder, flour and agave nectar to the mix and knead.
  4. Take out sections of the dough and roll in to thumb sized balls.
  5. Fry the chicken in a pan until cooked through. Add the pasata & stir in the paprika.
  6. Bring a pan of water to the boil, then add the gnocchi to the water and cook until it rises to the top of the water.
  7. Whilst the gnocchi is rising. Add the chorizo to the chicken & sauce mixture.

Halloumi & Lentils

Halloumi is A-MAZING! My only regret is that for some unknown reason I hadn’t discovered halloumi until I was into my twenties!! What the heck?! How crazy is that?! So here is one of my newly favourite recipes:

Ingredients:

• 1 Block Halloumi
• 1 Tin Of Lentils
• 1 Tbsp Capers
• ¼ Cup Of Pearl Barley
• 1 Lemon
• Handful Of Rocket Leaves
• ½ Pot Of Sour Cream
• 1 Courgette cubed
• 3 Tsps Dill

Method:

  1. Boil a pan of water, rinse pearl barley under the tap and then add to the water and simmer for 25 mins
  2. Rinse and drain the lentils and set aside to dry
  3. Mix the sour cream with the lemon zest and juice
  4. Add the lentils to cooked barley, and mix in the sour cream, dill and capers
  5. Heat a frying pan and cook the courgette for 5 minutes, add to the lentil & barley mixture.
  6. Slice and cook the halloumi until golden.
  7. Serve on top of the lentil & barley mixture.

Chicken Korma

I LOVE curry! But I hate things that are so spicy hot that you can’t taste the flavours, so this recipe is a perfect combination of creamy, spicy and will have you craving more! It’s great for a night with your friends and having a few drinks but is also mild enough that it’s kid friendly.

Ingredients:

• 3 tbsp greek yoghurt
• 1 red onion
• 4 cloves garlic
• Thumb sized piece of ginger, diced
• 3 tbsp korma curry paste
• 2 tsp coconut sugar
• 400 ml cold water

Method:

  1. Cook the onions, garlic and ginger in a pan.
  2. Stir in the curry paste and sugar and cook for 1 minute stirring continuously.
  3. Pour in the water and bring to a boil, then allow to simmer.
  4. Meanwhile, mix the chicken and yoghurt, then add that to the pan.
  5. Simmer until the chicken is cooked through.

Sausage Casserole

Sausage Casserole

We’re still in a weird time of year where the sun is coming out but sometimes it is still quite chilly out and you need a nice warming casserole to warm you up from the inside out. This yummy sausage casserole does just that!

Ingredients:

  • 1 red onion
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 400g chopped tomato
  • 400g black beans
  • 400g kidney beans
  • 8 sausages
  • Fresh chopped coriander

Method:

  1. In a pan cook the sausages over a medium heat until browned all over. Transfer to a plate.
  2. Add the onions to the pan and sautee, add the paprika, cumin and coriander and cook for 2 minutes stirring constantly.
  3. Add the tomatoes, half fill the tin with water and add that to the pan. Add the black and kidney beans and bring to a simmer.
  4. Return the sausages to the pan and cook for 10 minutes until the sauce has thickened and reduced.
  5. Serve on mashed sweet potato with fresh coriander to garnish.
