Vanilla & Cinnamon Chia Pod

Vanilla and cinnamon chia pod

My current obsession is chia seeds, this wonderful superfood is really helping me to get lots of omega 3 in to my diet which I am missing because I dislike fish šŸ™

To add some fun and variety I decided to make my very own chia pods to store in the fridge and I can grab them whenever I feel the need for something sweet to tickle my tastebuds!

Ingredients:

  • 2tbsp chia seeds
  • 1/2 cup coconutĀ milk
  • 1 tsp vanilla extract
  • 2 tsp cinnamon

Method:

  1. Add all of the ingredients together in a small kilner jar or ramekin dish
  2. Combine until well mixed and pop in the fridge overnight
  3. The chia seeds will swell in the liquid and will make it more gelatinous and yummy!

Doesn’t get any easier than that! I will be trying out plenty of other recipes version of this so watch this space for some more sweet treat inspiration!

Egg White Crisps

egg white crisps

Egg white crisps sounds a little bit odd right?! But they are actually delicious and a super healthy snack which is a great alternative to “normal” store bought crisps.

What’s even better is that they are really easy to make:

Ingredients

  • Liquid Egg Whites 250g
  • Water
  • Seasoning / spices

Method:

  1. Preheat the oven to 200C.
  2. Whisk up some egg whites, and add some water to thin them aĀ little bit, then add in whatever flavouring you want, salt & vinegar,Ā paprika, chilli etc.
  3. Use a muffin tin and pour the egg white mixture into the tin just to
cover the bottom, pop in the oven and cook until they become
    crisp.

Paleo Sausage Stew

Sausage StewWhen the night’s draw in early and it’s cold outside I am dying to eat hearty warming stews, here’s the latest paleo recipe for you to try; a nice and spicy sausage stew that takes about 40 minutes to cook, or it’s easily cooked in your slow cooker too, all you need to do is step 1 and then add everything to the crock pot in go. If you don’t want the spice then don’t add the chillies!

Spot Reduction – It’s A Myth

fat burningHow many times have you heard someone claiming that they do 200 situps in a day and accredit their washboard stomach to it? Yes, those situps will help develop the muscle but it won’t do jack about the layer of fat over those abdominals. It’s a common misconception that you can exercise toĀ target a specific area and thereby reduceĀ the fat in that area – wrong. Spot reduction of fat is a myth. Fact. Keep readingĀ and I will tell you why and what you can do about it!

How to Eat a Healthy Breakfast

Coconut Paleo Cereal mix

2.5 stone ago, I used to takeĀ a loaf of bread toĀ work each week and every morning for morning I would eat 2 slices of big fat white toast. And this was THE hardest habit to break. I knew I had to put a stop to this but I genuinely had no idea what I could eat for breakfast that was healthy and easy to have on the go.

I would research and look at all of these suggestions for breakfasts to have and they were all boiled egg with asparagus soldiers, or scrambled egg with bacon or some other variation that required me to eat breakfast at home. This just didn’t work for me. I already got up early enough and I don’t have an oven or hob at work that would enable me to eat these delicious suggestions or a boss who would allow me to not work and spend 15 minutes cooking a full breakfast instead of working! Sure I would have theseĀ on the weekend and would enjoy them but I needed something that I could make in advance and was quick and I could eat at my desk and wasn’t going to go off quickly, I needed to extend my meal prep to breakfast too.

After my first attempt of making quinoa and egg muffins (which I love straight out of the oven when theyĀ are nice and hot!) but reheated I genuinely thought I was going to be sick! It just wasn’t going to work for me. So I’ve had to come up with my own solutions such as;

All of these added some variety to my working weekday breakfasts and I found I could prep them on a weekend and box up to take to work during the week! Hopefully if you’ve been having a similar struggle this will help you out and save you some hassle and stress and might stop some of those excuses you may have been coming up with so you could still eat your toast every morning!!! šŸ˜› Hope you enjoy all of these yummy breakfast treats!

New Year, New Roo

Take a look at this before and after photo. This is me at the beginning of 2014 and one atWeight Loss 1st Jan 2014 - 23rd Nov 2014 EDITED the end of 2014. Here’s my storyĀ and how it can help you reach your goals for a happier, healthier and fitter 2015:

Throughout my mid to late twenties I started putting on weight, I hasten to add that I was never obese or what I would consider as fat, I was a very average size 12, Iā€™d always had a slender waist but my butt and thighs were a problem area and had made a few attempts at spot reduction on those problem areas – turns out spot reduction is a myth but there will be more on that in another post! I then started making ill advised excuses and made the assumption that my body shape was just down to genetics and that I was just going to have to accept that, and that I would never be able to wear skinny jeans with confidence. I was starting to feel self-conscious that I couldnā€™t wear what I felt was fashionable and I could never really make my mark on current trends because my body shape was holding me back. I think itā€™s really important to point out here that at no point did anyone tell me or make me feel like my body shape or weight was bad, I just did not feel comfortable in my own skin anymore and I wanted a change. You should only make changes based on how you feel and what you want, never based on someone elseā€™s opinion of you.

I absolutely loooooove fajitas, they are so flavoursome and feel really naughty but you can have them as a healthy option too! Here’s how I make mine:

Ingredients

  2. 3 tbsp agave nectar
  3. 1 tbsp red wine vinegar
  4. 1 tsp paprika
  5. 2 tsp chilli
  6. 2 tsp oregano
  7. 1 yellow pepper
  8. 4 chicken breasts
  9. 3 garlic cloves finely chopped

Method:

  • Mix all seasoning and wet ingredients to make a marinade.
  • Chop the chicken into chunks or strips
  • Pop the chicken in the marinade and make sure it is fully coated. Allow it to marinade for at least 30 minutes
  • Heat a little coconut oil or ghee in a pan on the hob, add the chicken mixture and heat until the chicken is cooked through
  • Chop the peppers and throw them in the pan with the chicken mixture for 5 minutes.
  • Serve with cauliflower rice, or use crunchy lettuce leaves as wraps.
