Chicken Korma

Chicken Korma

I LOVE curry! But I hate things that are so spicy hot that you can’t taste the flavours, so this recipe is a perfect combination of creamy, spicy and will have you craving more! It’s great for a night with your friends and having a few drinks but is also mild enough that it’s kid friendly.

Ingredients:

• 3 tbsp greek yoghurt
• 1 red onion
• 4 cloves garlic
• Thumb sized piece of ginger, diced
• 3 tbsp korma curry paste
• 2 tsp coconut sugar
• 400 ml cold water

Method:

  1. Cook the onions, garlic and ginger in a pan.
  2. Stir in the curry paste and sugar and cook for 1 minute stirring continuously.
  3. Pour in the water and bring to a boil, then allow to simmer.
  4. Meanwhile, mix the chicken and yoghurt, then add that to the pan.
  5. Simmer until the chicken is cooked through.

Chicken Pasta

Chicken penne pasta

Pasta is always my guilty pleasure and it is definitely a treat meal for me mainly because pasta does make me feel bloated afterwards and it’s the one thing where I really struggle with portion control! So as a special treat I made myself some chicken penne pasta 🙂

Ingredients:

  • 4 x chicken breasts
  • 4 cloves garlic
  • 1/2 tsp chilli powder
  • 1 tin chopped tomatoes
  • handful of fresh spinach
  • 1/2 cup greek yoghurt
  • 1/4 cup grated parmesan
  • 2 cups wholegrain pasta

Method:

  1. Chop and fry the garlic, then add the chicken and fry until it is cooked through.
  2. Add the chopped tomatoes and chilli to the pan
  3. In the meantime cook 2 cups of pasta
  4. As the pasta is cooking, add the greek yoghurt to the chicken mixture.
  5. Once the pasta is cooked, drain the pasta and then stir in the spinach and the cheese
  6. Finally add the chicken mixture to the pasta and stir in.
  7. Serve whilst piping hot.

So I’ve just come back from holiday and I haven’t been following my diet whilst I was away. I was on holiday after all and it was time for treat! And what’s really important to point out here is that I have been working out pretty much every day since January, so eating naughty foods for 2 weeks isn’t going to undo all of that hardwork, it will only undo it if I continue to eat like that when I get home! I very much live by the rule of work hard and play hard. So to get my butt in to gear and kick start my diet and fitness routine again I have made this really nice and juicy Ethiopian berbere spiced chicken with some cauliflower rice. I have also got a new obsession with green peppers so I am loading those in to everything I eat right now! Anyway, keep reading for the ingredients and how to pull this simple meal together. This recipe is all Paleo so is a really healthy meal. Enjoy!

Chicken & Black Bean Quinoa Enchilada Bake

Now I know I try to follow a Paleo diet most of the time but this recipe was too delicious to not try and I was craving mexican food, so this was the healthiest option available and it is still super healthy!!

black bean quinoa enchilada Ingredients:

  • 1.5 cups quinoa
  • 2 tins black beans
  • 2 chicken breasts
  • 1/2 bulb of garlic diced
  • 2 green chillies chopped
  • 1 jar of tomato / salsa / enchilada sauce of your choice
  • 1/2 cup of coriander (I love it so went with quite a lot, but you can reduce or remove)
  • I also added some chorizo because I had some left and I didn’t want it going off!

Method:

  1. Preheat your oven to 200C
  2. Boil some water and add the quinoa, cook the quinoa until there is no water left.
  3. In the meantime, fry the garlic and chillies, then add in the chicken and chorizo and fry gently until the quinoa is cooked.
  4. Take a baking dish and spoon in the quinoa and then add the black beans and mix thoroughly.
  5. Then add the chicken mixture and mix in as well.
  6. Pour in the salsa mix and stir in and then smooth out in the dish
  7. Cover it with some foil and cook in the oven for around 20 minutes
  8. Remove the dish and (if you want to) add some mozzarella cheese to the top and put back in the oven for a further 10 minutes.

With my current coriander obsession I will admit that I added even more coriander on top of the dish before I ate it!! It was scrumptious! And it was very hard to not put on my joggers and eat the whole dish! But this is been portioned out and will see me through a good few lunches at work next week!

Chicken & Chorizo with Crispy Salad

Ok, so I know that chorizo isn’t that good for you, but it’s ok in moderation. So I treated myself to a chicken and chorizo crispy salad. What’s good is that this counts as a yummy paleo and primal meal!

All I did for this quick and easy lunch was fry some chicken in nandos peri peri marinade and then added the chorizo. After about 20 minutes I just added it on top of a nice crispy salad. Simples.

Mmmmm.....yummy lunch for me today!! I know chorizo isn't the healthiest of meats but its OK to have in moderation so I treated myself to chicken and chorizo with a nice crispy salad :) #paleo #primal #fresh #eatgoodfeelgood
