I love trying new recipes but also love to keep things simple! The key to sticking with the paleo diet is to find things that can be made simply otherwise you may find yourself slipping and eating something non-paleo because it’s more convenient! So I decided to put a little spin on my parma ham wrapped chicken and added a honey and mustard sauce to it.
All I did was get 4 chicken breasts, parma ham, 1/4 cup of honey, 1 tbsp of mustard, and 1 tsp of rosemary. I mixed the honey, mustard and rosemary and then using a pastry brush I coated each breast in the mixture, then wrapped the parma ham around the chicken and then wrapped the whole lot in a piece of foil. I then popped the chicken in the oven for around 30 minutes on 200C.
I also put a little dollop of pesto on top of it for tea last night and had it with some sweet potato chips and some delicious rocket from Mama Roo’s garden! Yum!
