Vanilla & Cinnamon Chia Pod

Vanilla and cinnamon chia pod

 

My current obsession is chia seeds, this wonderful superfood is really helping me to get lots of omega 3 in to my diet which I am missing because I dislike fish šŸ™

To add some fun and variety I decided to make my very own chia pods to store in the fridge and I can grab them whenever I feel the need for something sweet to tickle my tastebuds!

Ingredients:

  • 2tbsp chia seeds
  • 1/2 cup coconutĀ milk
  • 1 tsp vanilla extract
  • 2 tsp cinnamon

Method:

  1. Add all of the ingredients together in a small kilner jar or ramekin dish
  2. Combine until well mixed and pop in the fridge overnight
  3. The chia seeds will swell in the liquid and will make it more gelatinous and yummy!

Doesn’t get any easier than that! I will be trying out plenty of other recipes version of this so watch this space for some more sweet treat inspiration!

Egg White Crisps

Egg white crisps sounds a little bit odd right?! But they are actually delicious and a super healthy snack which is a great alternative to “normal” store bought crisps.

What’s even better is that they are really easy to make:

Ingredients

  • Liquid Egg Whites 250g
  • Water
  • Seasoning / spices

Method:

  1. Preheat the oven to 200C.
  2. Whisk up some egg whites, and add some water to thin them aĀ little bit, then add in whatever flavouring you want, salt & vinegar,Ā paprika, chilli etc.
  3. Use a muffin tin and pour the egg white mixture into the tin just to
    cover the bottom, pop in the oven and cook until they become
    crisp.

Paleo Christmas Dinner

So it’s coming up to that time of year; Christmas is just around the corner you’re about to get paid and you need to battle the crowds in the supermarket to get all of your groceries for your delicious Christmas dinner! Not only have you got the added stress of Ā jostling to get the best things at the best prices but on top of that you’ve got the questions of what to get because whilst you want to treat yourself for Christmas you also don’t want to just eat “bad foods” because you’ve gotten used to eating a healthy Paleo diet and it’s actually rather yummy! So here’s some tips and recipes for delicious things to buy, make and devour this Christmas! You’ll feel like you’re being very naughty but not so bad that you’ll be getting a lump of coal in your stocking šŸ˜›

Elle True Diet Trial

My Protein have very kindly sent me a sample of their Elle True Diet Protein powder for me to trial and review. I am super psyched about giving this a go and can’t wait to give you guys my feedback. After being away on holiday for a couple of weeks and being a teeny bit naughty with my diet and doing next to no exercise at all, it’s time to kick start my healthy lifestyle again. And what better way to start than by addingĀ some protein powder in to my paleo (ish) healthy eating regime. I will be updating you guys on the way, and will include stats and measurements to confirm if this truly does work as a diet and weight loss aid. At the moment I am going to start by having this as a a shake with milk as a substitute for breakfast, but I will also have a play about and see if it can be added to some cheeky little desserts along the way. I also want to add that as always I am not solely relying on the protein powder as a miracle weight loss tool, I will continue to eat a healthy well balanced diet as well as doing my daily exercise/">HIIT workouts. Wish me luck and keep an eye out for my updates!

  • Weight: 8st 5.6
  • Waist: 25.5 inches
  • Hips: 36 inches
  • Thighs: 21 inches
  • Bust: 30 inches
  • Caliper body fat: 22.7%

Coconut Paleo Cereal mixIt’s really important for me to make breakfasts that I can box up and take into the office with me as I don’t have time to eat it before I leave the house in the morning. This one smelt so amazing when I was making it that it barely made it to the boxing up phase! I could have easily eaten the whole lot!

Paleo Sweet Potato & Carrot Fries

 

sweet potato and carrot friesThis is something I did a bit sneakily to try and get some vegetables into Roo Boy! He’s terrible for eating veg and I am growing to accept and not be deeply upset that he just isn’t willing to eat something’s that I cook. However, I managed to sneak a few carrots into him without him noticing and he gobbled up the lot, so if you want to add some veggies into your paleo diet, this is the way to do it. It’s a perfect replacement to normal chips and taste even more delicious. Especially when you dip them into my coriander, lime and jalapeno dip!

Coriander / Cilantro Lime and Jalapeno Dip

 

Ciltantro, lime and jalapeno dipCheck out this super easy and scrumptious coriander (or cilantro) lime and jalapeno dip! I tried something similar in a Mexican restaurant in Bristol recently and have been desperately trying to recreate it. I’ve not made an exact replica justĀ yet but this is the closest recipe I’ve managed to get to the real thing! And the bonus is it’s Paleo so I can have it on EVERYTHING! Have been trying it out on some of my colleagues and I’ve not got a look in on this one, it’s gone before lunchtime! I dare you to not enjoy it šŸ˜›
