Homemade Hummus Recipe

Hummus is amazing! It’s the one thing I cannot avoid when there are snacks out at a party! And the great thing is that if you make your hummus at home it’s super duper healthy 🙂

Hummus seemed like a really daunting thing for me to make but it’s actually surprisingly easy. It takes a few minutes to make and a few minutes to eat!

The only ingredients you’ll need to make this is:

  • 1 tin of chickpeas (drained)
  • 1 red pepper chopped roughly
  • 1 clove of chopped garlic
  • 2 tbsp tahini paste or almond butter.

To make your hummus simply pop all of the ingredient into a blender and blitz until it’s smooth. Spoon into a jar and refrigerate until you want to devour it! I like having mine with slightly heated pitta bread, sticks of pepper or carrot sticks 🙂

Healthy Snacks – Rosemary Roasted Pecans

So the January resolutions of getting fit and healthy are in full swing but there is one thing getting in your way; healthy snacks! So many people fall at this hurdle, they’re at work and suddenly the munchies take hold of you and you’re suddenly starving and it’s hours until lunch time! Noooooooo! Then you check your purse and trundle off to the vending machine and buy the “healthy” flapjack! Be prepared people! Making your own healthy snacks so you can have a stash in your bag or in your desk drawer is a great way to make sure you don’t fall off of the wagon! My latest healthy snack was inspired by Madeleine Shaw and is so quick and easy to make that you’ll be kicking yourself for not having done it sooner!

Rosemary roasted pecans is the best of all the healthy snacks! Firstly in my opinion pecans always taste better when they’re roasted and secondly nuts have all of the yummy good fats that you need in you want and not all of the bad sugary fats that you want to avoid.

So here’s what you do. Preheat your oven to 160C. Take your pecans and scatter them on a baking tray. Drizzle some melted coconut oil over them or some rapeseed oil. Then take some fresh rosemary and fling across the nuts! Shake the tray so everything gets all mixed together. Then bake in the oven for 25 – 30 minutes. Once the nuts have cooled a little, take some kitchen paper and put it on the work surface, then sprinkle the nuts on top then get some more kitchen paper and put it on top and then dab the nuts just to get off any excess oil, pop the nuts in a little baggy or tupperware container, and now you have the ultimate, most delicious of all healthy snacks at your fingertips whilst you are on the go!

Salsa Recipe

Salsa recipeSo after a camping trip with some of my paleo buddies a friend of mine made the MOST delicious salsa and I’ve taken her recipe and tweaked it a bit to make my own salsa recipe! This salsa recipe is amazing because it goes really well with fajitas or with salad on it’s own, or with hummus and pitta bread. Honestly the possibilities are endless! So without further ado here are the recipes and method for my homemade salsa recipe (warning; it’s garlicy!)

Ingredients:

  • 1 red pepper finely diced
  • 2 tomatoes deseeded and finely diced
  • 4 cloves of garlic finely diced
  • 2 spring onions finely diced
  • 1 tbsp apple cider vinegar
  • 1 tsp olive oil
  • A handful of fresh chopped coriander

Method:

  1. Chop all of the ingredients and mix together (yep it’s that simple!)

Pop in an airtight container and pop your delicious salsa in the fridge ready for consumption! If you want to add more colour and make your own salsa recipe why not add some green peppers into the mix as well? It’s also really nice if you squeeze some lime over the top to give a zesty flavour and make your salsa recipe fit your own tastebuds!

Coconut Matcha Truffles

Coconut Matcha TrufflesSo my latest obsession has been a matcha green tea latte and because I had purchased a sack of matcha powder I wanted to see what else I could do with it so I attempted a sweet treat of coconut matcha truffles! So before I give you the recipe and ingredients for these oh so mouth wateringly delicious coconut matcha truffles I am going to give a little bit of detail as to why matcha powder is so good for.

So you’ve probably all heard the green tea helps with weight loss right? Well 1 teaspoon of matcha powder is the equivalent to drinking 10 cups of green tea (in nutritional value anyway! So it’s a case of work smarter not harder with this one! You can easily pop 1/2 teaspoon into warm (not boiling water) and have a yummy super cup of green tea.

So anyway, back to the benefits of green tea; first of all it has no caffeine in it so is a great hot drink alternative for us caffeine obsessed people! It also has some great nutritional content of amino acids and vitamin c, selenium, chromium, zinc and magnesium minerals and natural plant pigment – chlorophyll. It’s also a vegetarian and vegan product and is 100% organic so it’s basically ticking every box here! But my favouritest thing about matcha powder is that it is a natural and organic food colouring! Hence why I have used it in my coconut matcha truffles! Matcha green tea powder is made from finely ground green tea leaves, which are covered during cultivation to protect them from direct sunlight. This increases their chlorophyll content, and turns the leaves a really bright and vivid green, and stimulates the production of amino acids. This bright green is such a fantastic colour and will give the wow factor to anything you use it in!

Now let’s get down to the bit you’ve been waiting for! The coconut matcha truffles recipe!!!

Coconut Matcha TrufflesIngredients:

 

 

Method:

  1. In a blender combine the coconut butter, matcha powder and maple syrup, feel free to add more maple syrup to taste
  2. Pulse until smooth
  3. Put in the fridge or freezer (if you’re too impatient!!) until the mixture hardens slightly – you want it to be hard enough to pick up but also soft enough to be able to mould into balls.
  4. Roll the matcha mixture into small balls
  5. In a separate bowl empty out the desiccated coconut, roll the matcha truffles around in the coconut to give an even coverage.
  6. Pop the ball on some parchment paper and then put them back in the fridge (or freezer) to harden some more.
  7. Eat chilled from the fridge.

Chickpea Snacks

Chickpea SnacksChickpea snacks are the best little bitesize of deliciousness you can make at home. They are cheap, easy to make and are great to bag up to take on the go. I like to make these for road trips, or to keep in my drawer at work. The great thing about these chickpea snacks is that you can make any flavour you want and the process is exactly the same.

To make your own chickpea snacks all you need to do is pre-heat your oven to 190C. Then drain your tin of chickpeas and put them into a bowl, It’s best to try and pat them dry with some kitchen towel to try and get the damp out. Finally drizzle with olive oil or melted coconut oil, then add in your flavour of choice, either sprinkle in some garam masala powder, or chili or paprika powder.Then pop on a baking tray covered in parchment paper. and bake in the over for 30 – 40 minutes.

Chickpeas are super healthy and are really low in calories and will help fill you up, so it makes the perfect snack between meals to help tide you over.

Halloumi Cheese Recipe

Halloumi cheese with honey, pistachios rosemary and thyme

This halloumi cheese recipe is the best! It is perfect as a small meal on it’s own when you’re not really hungry on a hot summers day, and also makes a great side dish for steak or salad. I do love a versatile recipe!

This little beauty couldn’t be any easier! All you need is to grill your halloumi until it’s browned on both sides, then chop up some pistachios and scatter them over the top, drizzle some honey over everything. And then finally chop up a little bit of fresh rosemary and thyme and sprinkle that over the lot. And hey presto you’ve got yourself one flavoursome treat!

My Protein Powder Mocha Coconut Power Bliss Balls

Wow! That’s a mouthful trying to say that title isn’t! Luckily these mocha coconut power bliss balls act as the perfect gob stopper 😛

My Protein sent me some fantastic samples and I have been thinking of different ways to use them other than the obvious protein shake mix up. So I’ve used the My Protein Impact Whey Protein Powder in Mocha flavour to make this bliss balls. The first thing I want to point out is that I don’t like coffee and I don’t really like coconut and I can’t get enough of these! I actually had to put them in the freezer so I had to make a conscious effort to take them and sit there and wait for them to thaw before eating them so it took away my ability to grab and snack! 😛

So here’s the My Protein Mocha Coconut Power Bliss Balls recipe! It gets a little bit oily and messy when rolling them into balls so be prepared for mess!

Ingredients:

  • 2 cups coconut chips
  • 1/2 cup mocha protein powder
  • 1/4 cup coconut oil
  • 1/2 cup honey
  • 1/2 cup cacao powder
  • 1/2 tsp vanilla extract
  • 1 tbsp chia seeds

Method:

  1. Blend all of the ingredients together until reasonably smooth
  2. Take a baking sheet and line with parchment paper
  3. Using a tbsp scoop out a tbsp of the mixture and roll in your hands to make a smooth ball
  4. Place it on the parchment paper lined tray
  5. Once you’ve rolled all of your balls pop in the fridge in set

Paleo Coconut Bounty Truffles

Paleo coconut bounty truffles

Everyone needs a sweet treat every now and again and oh man are these insanely delicious!!!

Now I’m the first person to admit that a bounty bar is the last chocolate I would ever want to buy in the supermarket, but these are immense and thankfully I know how to make them otherwise I would spend a fortune on buying them!

Ingredients:

  • 1/4 cup butter
  • 1/2 tsp vanilla extract
  • 2 tbsp creamed coconut
  • 1 1/2 cup stevia
  • 1 cup coconut flakes
  • 60g cacao butter
  • 50g cacao powder
  • 1 tbsp agave nectar

Method:

  1. Beat together the butter, vanilla extract and creamed coconut.
  2. Slowly start adding in the stevia
  3. And finally start adding in the coconut flakes until everything is well blended
  4. Put some parchment paper on a baking sheet
  5. Take a tbsp size piece of the mixture, roll in to a ball and put on the parchment paper
  6. Chill for about 1 hour
  7. Before you take the coconut balls out of the fridge melt the cacao butter (bain-marie), once the butter has melted add in the cacao powder and then finally add in the agave nectar to sweeten.
  8. Remove the chocolate from the pan and allow it to thicken a bit (this is important otherwise it makes it a bit harder to cover the truffles!)
  9. The final step is to dip the coconut truffles in the cacao mix so it is evenly coated. Put on a fresh piece of parchment paper covered baking sheet,  and then pop back in the fridge to chill and harden.
  10. See how many you can stick in your mouth in one go! 😛

Cacao & Agave Chia Pod

I’ve been at it again! I’ve made another flavour chia pod to add to my list! Can’t wait to keep adding some more! This one is by far my favourite!

Ingredients:

  • 2 tbsp chia seeds
  • 1/2 cup coconut milk
  • 1 tbsp agave nectar
  • 1 tsp cacao powder

Method:

  • Mix all ingredients together in a small kilner jar or ramekin dish
  • Make sure the cacao powder is really well blended, you may have to make a small folding action to get this to mix in well.
  • Pop in the fridge for the seeds to swell and for the mixture to chill overnight.

I’m going to keep adding recipes for these Chia pods, if anyone has any ingredient requests that they want me to experiment with add them in the comments and I will try and make something to tantalise your tastebuds 🙂

Homemade Nutella

homemade nutellaEaster is just around the corner and the last thing I want to do is be that boring person who says “No chocolate for me thanks, I’m on a diet”! I am not and never will be that person! A lot of people assume that because you’re fit and healthy that it means you are sacrificing the fun things like chocolate, POPPYCOCK! I’ll let you in on a secret; I don’t eat chocolate every day because it is a treat and I always want it to be a treat, secondly I make my chocolate and healthiness aside it’s great fun and seriously makes the chocolate all the more enjoyable! You can add whatever flavours you want 🙂 So firstly try making your own raw chocolate. And secondly if that’s not your thing, try out this amazing nutella recipe instead! Not only is it A-Mazing it’s also dairy free, vegan and paleo friendly. The only tricky part is getting the skins off the hazlenuts, other than that it’s a doddle – enjoy 🙂

roasted hazelnuts

Ingredients:

  • 50g oats
  • 2 cups soaked hazelnuts
  • ¼ cup raw cacao powder
  • 2tbsp coconut oil
  • ½ cup almond milk
  • 1tsp vanilla extract
  • ½ cup coconut sugar
  • Pinch of salt.

Method:

  1. Preheat oven to 190C
  2. Spread hazelnuts on sheet and cook until skins have darkened – 10/15 mins.
  3. Put nuts in a damp kitchen towel and rub the nuts until their skins come off
  4. Pop them in a blender and blend until they become a fine powder.
  5. At this point you should add the coconut oil, keep going until the mixture becomes smooth and creamy.
  6. Then gradually start adding in the remaining ingredients, blend, scrape down the sides, add some more and repeat until all is added and the mixture is smooth.
  7. Pop in to a jar and store in the fridge.
