Halloumi Cheese Recipe

Halloumi cheese with honey, pistachios rosemary and thyme

This halloumi cheese recipe is the best! It is perfect as a small meal on it’s own when you’re not really hungry on a hot summers day, and also makes a great side dish for steak or salad. I do love a versatile recipe!

This little beauty couldn’t be any easier! All you need is to grill your halloumi until it’s browned on both sides, then chop up some pistachios and scatter them over the top, drizzle some honey over everything. And then finally chop up a little bit of fresh rosemary and thyme and sprinkle that over the lot. And hey presto you’ve got yourself one flavoursome treat!

How To Make A Smoothie

I had a wee think before posting this one because smoothies are definitely not as healthy as people think they are! They are healthy if made properly and it’s really important to think of a smoothie as a meal because it will contain as many calories (if not more) than your average snack or lunch. When smoothies are unhealthy it’s because people see it as a beverage rather than a meal replacement. So if you are going to use this “Build A Smoothie Guide” that is my disclaimer! You’ve been warned; now enjoy!

Hearty Chorizo, Kidney Bean & Veggie Soup

I am soooooo in love with a nice warming soup, especially when there’s such a chill in the air, it warms your cockles and muscles alive alive-o! Added bonus it’s a one-pot dish so minimal washing up afterwards – it’s win win!

  1. 3 garlic cloves
  2. 1 red onion
  3. 2 tbsp coconut oil / ghee
  4. 1 red pepper
  5. 1.5 – 2 tbsp tomato paste
  6. 1.5 pints vegetable stock
  7. 1 medium sized sweet potato
  8. half ring of chorizo
  9. 1 courgette
  10. 1 tin of kidney beans
  11. 1 tin of coconut milk (use cream at top)


  1. Melt the coconut oil or ghee in a large saucepan
  2. add the chopped garlic cloves and onion and fry for a couple of minutes
  3. Then add the red pepper and fry for a couple more minutes
  4. Add a small amount of the vegetable stock and tomato paste to a measuring jugĀ and mix until thick
  5. add this to the pan and then add the remaining amount of stock and potatoes
  6. bring to the boil and simmer for 30 minutes stirring occasionally
  7. then add the courgette and chorizo and kidney beans (drained) and stir.
  8. cook for 15 minutes
  9. then add the coconut cream and cook for a further 15 minutes

Serve and devour!

Paleo Christmas Dinner

So it’s coming up to that time of year; Christmas is just around the corner you’re about to get paid and you need to battle the crowds in the supermarket to get all of your groceries for your delicious Christmas dinner! Not only have you got the added stress of Ā jostling to get the best things at the best prices but on top of that you’ve got the questions of what to get because whilst you want to treat yourself for Christmas you also don’t want to just eat “bad foods” because you’ve gotten used to eating a healthy Paleo diet and it’s actually rather yummy! So here’s some tips and recipes for delicious things to buy, make and devour this Christmas! You’ll feel like you’re being very naughty but not so bad that you’ll be getting a lump of coal in your stocking šŸ˜›

Chicken & Black Bean Quinoa Enchilada Bake

Now I know I try to follow a Paleo diet most of the time but this recipe was too delicious to not try and I was craving mexican food, so this was the healthiest option available and it is still super healthy!!

black bean quinoa enchiladaĀ Ingredients:

  • 1.5 cups quinoa
  • 2 tins black beans
  • 2 chicken breasts
  • 1/2 bulb of garlic diced
  • 2 green chillies chopped
  • 1 jar of tomato / salsa / enchilada sauce of your choice
  • 1/2 cup of coriander (I love it so went with quite a lot, but you can reduce or remove)
  • I also added some chorizo because I had some left and I didn’t want it going off!


  1. Preheat your oven to 200C
  2. Boil some water and add the quinoa, cook the quinoa until there is no water left.
  3. In the meantime, fry the garlic and chillies, then add in the chicken and chorizo and fry gently until the quinoa is cooked.
  4. Take a baking dish and spoon in the quinoa and then add the black beans and mix thoroughly.
  5. Then add the chicken mixture and mix in as well.
  6. Pour in the salsa mix and stir in and then smooth out in the dish
  7. Cover it with some foil and cook in the oven for around 20 minutes
  8. Remove the dish and (if you want to) add some mozzarella cheese to the top and put back in the oven for a further 10 minutes.

With my current coriander obsession I will admit that I added even more coriander on top of the dish before I ate it!! It was scrumptious! And it was very hard to not put on my joggers and eat the whole dish! But this is been portioned out and will see me through a good few lunches at work next week!

Paleo Beef Stuffed Peppers

Over the weekend I decided to make some stuffed peppers, now these don’t need to be done in the slow cooker, you could quite easily cook these in the oven for an hour just like my stuffed romano pepper recipe but it was handier for me to be able to put these in the slow cooker whilst I went out and about and did all of my chores over the weekend and could leave these cooking. And also it’s so exciting to come home and smell dinner cooking because it makes it feel like someone else has cooked for you for a change!!

Paleo stuffed peppers


This recipe is really simple, all you need to do is get a blender and mix together your cauliflower, minced beef, onion, courgette and carrot (and anything else you might want to add). Chop the top off of each pepper and deseed. Then spoon in the mixture and replace the top. Pop your peppers in the slow cooker and then pour in some pasata and beef stock until it rises up to about 1.5cm and cook on low for 6 hours. Simples!

The summer is here and that means it’s bbq season! Everyone wants to sit out, cook out and chill out! The great thing about bbq’s is that it is generally a meat fest so it’s great for us carnivorous paleo eaters, however it’s usually the bits on the side that tend to be where we fail. Also if you’re inviting people over and they don’t care whether or not it’s paleo they just want yummy food!
