How to Eat a Healthy Breakfast

2.5 stone ago, I used to take a loaf of bread to work each week and every morning for morning I would eat 2 slices of big fat white toast. And this was THE hardest habit to break. I knew I had to put a stop to this but I genuinely had no idea what I could eat for breakfast that was healthy and easy to have on the go.

I would research and look at all of these suggestions for breakfasts to have and they were all boiled egg with asparagus soldiers, or scrambled egg with bacon or some other variation that required me to eat breakfast at home. This just didn’t work for me. I already got up early enough and I don’t have an oven or hob at work that would enable me to eat these delicious suggestions or a boss who would allow me to not work and spend 15 minutes cooking a full breakfast instead of working! Sure I would have these on the weekend and would enjoy them but I needed something that I could make in advance and was quick and I could eat at my desk and wasn’t going to go off quickly, I needed to extend my meal prep to breakfast too.

After my first attempt of making quinoa and egg muffins (which I love straight out of the oven when they are nice and hot!) but reheated I genuinely thought I was going to be sick! It just wasn’t going to work for me. So I’ve had to come up with my own solutions such as;

All of these added some variety to my working weekday breakfasts and I found I could prep them on a weekend and box up to take to work during the week! Hopefully if you’ve been having a similar struggle this will help you out and save you some hassle and stress and might stop some of those excuses you may have been coming up with so you could still eat your toast every morning!!! 😛 Hope you enjoy all of these yummy breakfast treats!

Paleo Christmas Dinner

So it’s coming up to that time of year; Christmas is just around the corner you’re about to get paid and you need to battle the crowds in the supermarket to get all of your groceries for your delicious Christmas dinner! Not only have you got the added stress of  jostling to get the best things at the best prices but on top of that you’ve got the questions of what to get because whilst you want to treat yourself for Christmas you also don’t want to just eat “bad foods” because you’ve gotten used to eating a healthy Paleo diet and it’s actually rather yummy! So here’s some tips and recipes for delicious things to buy, make and devour this Christmas! You’ll feel like you’re being very naughty but not so bad that you’ll be getting a lump of coal in your stocking 😛

Elle True Diet Trial

My Protein have very kindly sent me a sample of their Elle True Diet Protein powder for me to trial and review. I am super psyched about giving this a go and can’t wait to give you guys my feedback. After being away on holiday for a couple of weeks and being a teeny bit naughty with my diet and doing next to no exercise at all, it’s time to kick start my healthy lifestyle again. And what better way to start than by adding some protein powder in to my paleo (ish) healthy eating regime. I will be updating you guys on the way, and will include stats and measurements to confirm if this truly does work as a diet and weight loss aid. At the moment I am going to start by having this as a a shake with milk as a substitute for breakfast, but I will also have a play about and see if it can be added to some cheeky little desserts along the way. I also want to add that as always I am not solely relying on the protein powder as a miracle weight loss tool, I will continue to eat a healthy well balanced diet as well as doing my daily exercise/">HIIT workouts. Wish me luck and keep an eye out for my updates!

Paleo Coconut Cereal Mix

Coconut Paleo Cereal mixIt’s really important for me to make breakfasts that I can box up and take into the office with me as I don’t have time to eat it before I leave the house in the morning. This one smelt so amazing when I was making it that it barely made it to the boxing up phase! I could have easily eaten the whole lot!

Lemon and Chia Seed Muffins

lemon and chia seed muffinsI made these delicious lemon and chia seed muffins over the weekend. They’re gluten free, paleo, light and airy!

They make a great alternative for breakfast and is great for eating on the go 🙂 These were easy to make and were a firm favourite with my happy helpers who were there to do the taste testing!

paleo coconut flour pancakes

It’s taken me ages to master these and finally I can enjoy some delicious Paleo coconut flour pancakes!! Just whisk all of the wet ingredients together until its frothy, then add the dry ingredients and combine until there are no more lumps. Heat a pan and fry away!

Paleo Pancakes


  • 2 – 3 tbsp coconut oil
  • 2 large eggs
  • 1/4 cup raw / pure honey
  • 1 1/2 tbsp vanilla extract
  • 3/4 cup of almond milk, coconut milk or water
  • 1 cup of ground almonds (or almond flour – they’re the same thing)
  • 1/3 cup of coconut flour (if you can’t find this, buy dessicated coconut and grind to make flour)


1. Put the almond and coconut flour into a bowl and mix.

2. Put the eggs, honey, vanilla extract and almond / coconut / water into a blender and blitz until it’s a smooth mixture.

3. Gradually pour this mixture onto the flour mixture and stir in together to make the pancake batter.

4. Place a 1 – 1 1/2 tbsp of coconut oil into a frying pan and heat (don’t have it too hot otherwise you will burn your scrummy pancakes!), when ready add some of the batter to make your first pancake. When bubbles start to appear in the top of the pancake it’s time to turn it. Once flipped cook for another 2 minutes and then serve.

Serving options:

Drizzle a tsp of raw honey on top of the pancake

Sprinkle some dessicated coconut on top of your pancakes

Serve with scrabbled eggs (or any other type of egg you prefer!)

Peanut Flapjacks

These are my favourite! I found it soooooo hard giving up eating toast for breakfast every day (that’s now a 1 off weekend day treat for me these days!) but these amazing little flapjacks have been a life saver!


  • 1 cup peanut butter (or almond butter for paleo option) – Make sure you use 100% peanut butter and not one with palm oil in it
  • 2 1/2 cups oats
  • 1/3 cup of honey – Make sure you use 100% raw / pure honey


1. Put the peanut butter and honey in to a bowl and mix together

2. Gradually add the oats until it is all mixed together and is gelled together but not too sticky

2.5 If you want to add extra ingredients like berries then add them at this stage. I just prefer the peanut version 🙂

3. Spread the mixture into a tray and pop in the fridge overnight.

4. In the morning once the mixture has solidified chop up into small bite size pieces and then they are ready for breakfast or as a healthy snack during the day.
