Eggs in Blankets

Eggs in BlanketsEggs are such a great and healthy way to start the day. Before I decided to change my diet, bread was a big part of my breakfast and I couldn’t get my head around what you would have with your eggs or with your bacon, because everything should be sandwiched or on toast! Don’t get me wrong I still eat bread from time to time and I’ll have a nice sourdough loaf in the freezer for those occasions but I’ll let you in on a secret you can make a tasty breakfast without toast!!!

So here’s the simple recipe for eggs in blankets. It’s a quick an easy way to cook your eggs and up your protein intake. And you can try this with turkey rashers as well as bacon..

Ingredients:

  • 6 rashers of bacon
  • 3 large eggs
  • a pinch of chilli flakes
  • a pinch of pepper
  • chopped coriander for garnish
  1. First of all pre-heat the oven to 160C (fan-assisted).
  2. Then grease a muffin tin with some coconut oil or ghee. Line each part of the muffin tin with one rasher of bacon.
  3. Now you have 2 options here and it depends on how you like your bacon; I like mine well done so I put the bacon lined muffin tin in the oven for 5 minutes before adding the egg mixture. If you like your bacon just cooked skip straight to step 4
  4. Beat 3 eggs (1 egg will make 2 portions) and add in some pepper and chilli flakes for flavour
  5. Pour the egg mixture into your bacon parcels
  6. Pop in the oven and bake your eggs in blankets for 15 minutes
  7. Remove the egg and bacon nest from the muffin tin and scatter with coriander to taste.

And there you have it, an easy recipe to make eggs for breakfast without any bread and plenty of flavour! 🙂

Poached Egg Hash

poached egg hashSome days I wake up and really crave something different for breakfast and that’s where this poached egg hash recipe came from! I was craving breakfasty eggs and bacon but also really wanting sweet potato carb yumminess! Poached egg hash is a great meal to start the day with because it has your proteins, fats and carbs all rolled in to one dish. It’s not a quick dish as it takes about 20 minutes for the spuds to cook, but oh boy is it worth it!

So here’s how to make your delicious treat breakfast of poached egg hash with bacon and coriander! Cube your spuds and fry with the bacon in coconut oil for 20 mins. Meanwhile poach your eggy, scatter with coriander when your done and BOOM! you’ve got yourself a treat! Poached Egg Hash for every meal please!!!

Avocado Pancake

avocado pancakeIf you’ve not tried an avocado pancake you have no idea what you’re missing out on! This avocado pancake recipe is quick, easy, healthy, clean eating, paleo, raw and delicious, if you ask me that ticks all of my boxes! So to make this avocado pancake breakfast all you need is half an avocado and 1 large egg. Ok so let’s do this! Scoop out half of an avocado and whisk or mash it up in a bowl until it is smooth. Then crack a large egg in to the avocado and mix in until it’s well combined. Heat a small frying pan and pop a small amount of olive oil or coconut oil into the pan, once it’s hot pour in your avocado mixture and roll in the pan to let it spread. As with normal pancakes use a spatula to test the edges and smooth out the mixture and wait for the avocado pancake to start bubbling holes in the top, then flip it and cook on the other side for another 30 seconds to 1 minute until your happy it’s cooked through.

Once your avocado pancake is cooked, pop it on a plate, spoon on some greek yoghurt and sprinkle on some cinnamon and a dash of maple syrup and oh boy you’ve got yourself THE most delicious avocado pancake breakfast you will ever taste!

You can try this with other ingredients too: use 1 banana a 2 eggs, or 1 small sweet potato and 2 eggs. Whichever tingles your tastebuds and it’s so healthy!!!

Every now and again I absolutely crave pancakes and won’t be happy until I’ve had some, so here is a yummy pancake recipe to satisfy those cravings! I made mine a with 50 / 50 gluten free flour and coconut flour.

This pancake recipe is really quick and easy to make and even easier to eat! Check it out!

pancake recipe honey and pecanIngredients:

  • 1/2 cup gluten free flour
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 large egg
  • 1 cup buttermilk or soured cream
  • 3 tbsp honey / agave nectar / maple syrup
  • Handful of chopped pecans

Method:

  1. In a bowl mix together all of the dry ingredients (excluding the pecans)
  2. Gradually add in the wet ingredients until the mixture is smooth
  3. Heat a small frying pan and heat a little bit of coconut oil
  4. Pour in a small amount of the mixture and wait for it to bubble on the top, then flip it and cook for a few more seconds to brown it off. Repeat!
  5. Finally you can stick a little bit of butter (if you’re having a treat!) and some honey, maple syrup or agave nectar on the top and then sprinkle the pecans over the top.
  6. Other topping suggestions are; desicated coconut or coconut flakes, ground cinnamon or nutmeg, a pinch of coconut sugar, or go savoury and add a slice of bacon.

Quite frequently people will say that their downfall when trying to eat healthy is having breakfast alternatives that will replace toast; enter the healthy breakfast alternative of egg and pepper combo that will blow your mind!

This one is super easy, adds some colour and excitement to your plate and looks a little bit like a flower to entice your little ones into joining in!

All you need to do is a take a pepper, deseed it and then slice it in rings. Heat a pan on the hob and then put your pepper into the pan, crack your egg into the pepper and then flip as normal.

Adding pepper to your healthy breakfast is a great way to start the day because they’re low in calories, and full of good nutrients such as vitamin A, and your egg will give you lots of protein and good fat 🙂 So start adding egg and pepper to your plate for a healthy breakfast choice!

How To Make A Smoothie

I had a wee think before posting this one because smoothies are definitely not as healthy as people think they are! They are healthy if made properly and it’s really important to think of a smoothie as a meal because it will contain as many calories (if not more) than your average snack or lunch. When smoothies are unhealthy it’s because people see it as a beverage rather than a meal replacement. So if you are going to use this “Build A Smoothie Guide” that is my disclaimer! Oatty Yoghurt Breakfast Pots

Oat breakfast pots meal prepI’ve recently started building nutrition plans for people and one of the most common things I hear from my clients is that they find breakfast is the hardest meal of the day and I definitely agree. The morning’s are always a rush no matter what your job and routine is. So the key to eating a healthy breakfast is prep prep and more prep! That is the only way to stop myself from having a breakfast that is bad for me. Quite often there are recipes that need an oven or a hob to cook on and quite a lot of people eat their breakfast when they get to work and not surprisingly your work doesn’t offer a fully operational kitchen complete with a cooker! I was watching a few colleagues who would pop to a nearby Soho Coffee and would buy a tiny yoghurt pot for a couple of pounds and whilst it looked amazing all I could think was I don’t know what’s in it and how expensive it was, and that led me to decide that I could make it for less money and I could make it 10 times more delicious!!! So I’ve bought myself 5 small kilner jars so I can make my own breakfast pots!

Ingredients:

  1. Oats
  2. Greek Yoghurt
  3. Honey
  4. Cinnamon
  5. Cacao nibs
  6. Linwoods flaxseed, pumpkin seed, goji berries

Method:

  • Pour a layer of oats in to the base of the kilner jar
  • Spoon on a layer of greek yoghurt
  • Sprinkle some ground cinnamon on top of the yoghurt
  • Drizzle a small amount of honey on top of the cinnamon
  • Repeat all of the above.
  • Add a pinch of cacao nibs
  • And finish with 1/4 tsp of flaxseed mix on top

Cacao & Agave Chia Pod

I’ve been at it again! I’ve made another flavour chia pod to add to my list! Can’t wait to keep adding some more! This one is by far my favourite!

Ingredients:

  • 2 tbsp chia seeds
  • 1/2 cup coconut milk
  • 1 tbsp agave nectar
  • 1 tsp cacao powder

Method:

  • Mix all ingredients together in a small kilner jar or ramekin dish
  • Make sure the cacao powder is really well blended, you may have to make a small folding action to get this to mix in well.
  • Pop in the fridge for the seeds to swell and for the mixture to chill overnight.

I’m going to keep adding recipes for these Chia pods, if anyone has any ingredient requests that they want me to experiment with add them in the comments and I will try and make something to tantalise your tastebuds 🙂

Homemade Nutella

homemade nutellaEaster is just around the corner and the last thing I want to do is be that boring person who says “No chocolate for me thanks, I’m on a diet”! I am not and never will be that person! A lot of people assume that because you’re fit and healthy that it means you are sacrificing the fun things like chocolate, POPPYCOCK! I’ll let you in on a secret; I don’t eat chocolate every day because it is a treat and I always want it to be a treat, secondly I make my chocolate and healthiness aside it’s great fun and seriously makes the chocolate all the more enjoyable! You can add whatever flavours you want 🙂 So firstly try making your own raw chocolate. And secondly if that’s not your thing, try out this amazing nutella recipe instead! Not only is it A-Mazing it’s also dairy free, vegan and paleo friendly. The only tricky part is getting the skins off the hazlenuts, other than that it’s a doddle – enjoy 🙂

Vanilla & Cinnamon Chia Pod

My current obsession is chia seeds, this wonderful superfood is really helping me to get lots of omega 3 in to my diet which I am missing because I dislike fish 🙁

To add some fun and variety I decided to make my very own chia pods to store in the fridge and I can grab them whenever I feel the need for something sweet to tickle my tastebuds!

Ingredients:

  • 2tbsp chia seeds
  • 1/2 cup coconut milk
  • 1 tsp vanilla extract
  • 2 tsp cinnamon

Method:

  1. Add all of the ingredients together in a small kilner jar or ramekin dish
  2. Combine until well mixed and pop in the fridge overnight
  3. The chia seeds will swell in the liquid and will make it more gelatinous and yummy!

Doesn’t get any easier than that! I will be trying out plenty of other recipes version of this so watch this space for some more sweet treat inspiration!
